MIRACLE SPICE (with apologies to Pierre et Gilles)!
Ok, it’s technically a seasoned salt but it is my all time, super favorite, use on anything, secret weapon for deliciousness.
Salt, Lemon, Chiles. Awesome in it’s traditional Latin American use on fruit and in salsa. Brilliant on eggs, in pasta dishes, guacamole, seafood, chicken, lamb EVERYTHING! I LOVE IT! You could even make your own at home by getting some chili powder or whole dry chilies and grinding them to powder in a spice grinder or food processor, kosher salt and combining with some dried lemon zest. Grind for a minute in a food processor to combine. This way you can control the heat and type of chili and the level of lemon you like.
But honestly the store bought stuff is the best and it’s only like $2 a jar! There are many brands available here in Southern California and this one happens to be my favorite and is carried in Von’s and Ralph’s or you can order it on the Interweb.
