Left-Over Lunch with Lettuce
I usually make a little too much of anything because after cooking it all up one night, I just want to grab something quick and go the next day.
Here’s how some left over leg o’ lamb turned into a couple of day’s lunch.
First is how easy it is to make a rockin’ salad. Thin slices of lamb on some mixed greens out of the package, chop a tomato, a hand-full of croûtons (home-made from an earlier post), some yellow  bell pepper and tossed simply with olive oil, lemon, salt and pepper and a dash of Miracle Spice. Took 6 minutes to combine and I put the olive oil and lemon dressing in a seperate little snack size zip lock to keep everything fresh until lunch.
The second lunch was some more lamb sliced a bit thicker on toasted bread, schmere of mayo and country Dijon, lettuce mix and alfalfa sprouts (which I’m really into these days). Done. Delish.
Lamb is versitle, easy to cook, tasty and also healthier than beef. Try some today!
