Here’s something so simple and healthy AND delicious.
A brown rice salad I had in Venice, CA. A bowl of brown rice with grilled chicken, carrots, cucumbers, basil, mint, sweet onion, caggage and lettuce with a sesame vinegrette. Almost had the feeling of a Vietanmese Bun bowl (which is my current favorite Vietnamese dish) but the health food version. I think I’ll make this at home but use Thai red rice instead of brown.
If you have an asian market near you, pick up some Thai red rice or black/purple rice to try. They both have a great nutty flavor and interesting texture plus look so damn dramatic in place of the usual tan stuff or, god forbid, white! Cooking is much like brown rice with the same 2:1 water:rice ratio with cooking time a bit shorter.
